This example shows you how you can add total discount to your quote template.
I create a new template based on the "quotation details" template
I add "alternative/discountPercent"% and "alternative/discountAmount"
I create a new sale with 5% total discount.
I click "Send" and choose my template "Qtot".
The result looks like this:
